In our process, the first step is to protect and foster the reproduction of threatened agave species.
Innovative Irrigation and Pest Control
Utilizing an advanced irrigation system, we minimize water consumption and maximize its reuse. We are committed to finding eco-friendly alternatives for pest control, significantly reducing the need for harmful pesticides.
Collaboration with Autonomous University of Chapingo
Our collaboration with researchers from the Autonomous University of Chapingo is central to promoting the reproduction of threatened agave species. Our mission is to implement a circular and sustainable reproduction model, ensuring the conservation of these vital plants.
Project Milestones and Goals
Launched in 2019 with a total area of 70 hectares, our project has achieved significant milestones:
In 2020, we planted 30 hectares of agave.
In 2021, we expanded by planting an additional 100 hectares.
In 2022, we added another 100 hectares.
With a current inventory of 300 hectares, we continue to reproduce seedlings in our nurseries for future plantations. Our short-term goal is to incorporate renewable sources, further enhancing our sustainability efforts.
Comprehensive Agave Care
From germination in greenhouses to growth in nurseries and development into mature plants in the field, we meticulously care for maguey seedlings at every stage.
Community Involvement and Employment
We rescued lands at risk of becoming municipal landfills by planting over 12 native agave species. By involving the local community, we have generated more than 40 jobs, fostering economic growth and environmental stewardship.

Coyote
Known for its unique and complex flavor profile, often featuring herbal and earthy notes. This wild agave is rare and typically grows in rocky, high-altitude areas, making its mezcal highly sought after.
Tobalá
Small, wild species that grows in rocky, high-altitude regions. Its mezcal is renowned for its rich, complex flavors with hints of tropical fruit, herbs, and a distinctive minerality, making it a highly prized and rare mezcal.
Sierra Negra
Sierra Negra agave is a wild variety known for its intense and complex flavors, often exhibiting smoky, earthy, and spicy characteristics. Its mezcal is prized for its depth and robust profile, making it a favorite among connoisseurs.
Espadín
Espadín agave is the most commonly cultivated species for mezcal production, known for its versatility and balanced flavor. Its mezcal often features a harmonious blend of sweet, fruity, and smoky notes, making it a popular choice.
Arroqueño
Arroqueño agave is a large, slow-growing species that produces mezcal with a rich and robust flavor, characterized by sweet and fruity notes with a hint of spice. Its long maturation period contributes to its complex and refined taste.
Cuishe
Cuishe agave, known for its slender leaves, yields a mezcal with distinctive herbal and mineral notes. This wild agave is often harvested from rocky terrains, contributing to its unique and bold flavor profile.
Mexicano
Mexicano agave, also known as Rhodacantha, offers a mezcal with bright, floral, and fruity flavors. This agave species is commonly found in the valleys and canyons of Oaxaca, and its mezcal is appreciated for its smooth and aromatic qualities.
Azulín
Azulín is a cross between Espadín and Arroqueño agaves, known for its unique characteristics, though it is still in the process of botanical classification. It contributes a distinct flavor profile to mezcal, with a combination of sweet and floral notes.
The Castilla agave, commonly found in the highlands of Oaxaca, produces a mezcal with a smooth, balanced profile, featuring a blend of sweet, fruity, and slightly smoky flavors.

Tobasiche
The Tobasiche agave, a variety of the Karwinskii species, is distinguished by its long, slender leaves and towering, upright growth. It yields a mezcal celebrated for its rich, herbaceous flavors and smoky, earthy undertones.
