Debunking Myths

Mezcal, often misunderstood and surrounded by a plethora of myths, is a traditional Mexican spirit that deserves a deeper appreciation.

The Truth: While some mezcals have a smoky flavor, it’s not a universal defining characteristic. The “smokiness” can come from traditional production methods that involve roasting agave hearts in underground pits, but flavor as a whole is influenced by other factors including the type of agave used, the location where the mezcal was crafted, and the aging process involved. When combined, each of these elements blend together to create fruity, earthy, spicy, or even floral notes.

Myth 1: All Mezcals Taste Smoky

The Truth: Espadin agave is commonly used, but it’s far from the only option. Mezcal can be crafted from over thirty agave varieties, including rare and wild types such as tobalá, cuishe, and tepeztate, each imparting its own flavour.

Myth 2: Mezcal is Only Made From Espadin Agave

1 Agave Harvesting

2 Agave Roasting
  • Slow-cooking the agave hearts (piñas) in our traditional earthen pits.

3 Crushing and Extracting
